Ingredients

  • ½ cup ground almonds 
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • 2 tablespoon stevia, to taste
  • 1  egg
  • 4 egg whites
  • Butter

Instructions

  1. Mix almond meal, baking powder, cinnamon, baking powder, stevia, and whole egg.
  2. In a separate bowl, whisk egg whites to soft peaks.
  3. Fold egg whites into the almond flour mixture.
  4. Heat a non-toxic, non-teflon skillet. Add a pat or two of butter.
  5. Drop pancake batter into the hot pan to your preferred size.
  6. When the edges of the pancakes brown, flip and cook the other side until brown.
