Ingredients
- ½ cup ground almonds
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- 2 tablespoon stevia, to taste
- 1 egg
- 4 egg whites
- Butter
Instructions
- Mix almond meal, baking powder, cinnamon, baking powder, stevia, and whole egg.
- In a separate bowl, whisk egg whites to soft peaks.
- Fold egg whites into the almond flour mixture.
- Heat a non-toxic, non-teflon skillet. Add a pat or two of butter.
- Drop pancake batter into the hot pan to your preferred size.
- When the edges of the pancakes brown, flip and cook the other side until brown.
